What's the difference between the FVR and TOP series of ovens?

The TOP series of ovens have a side-hung removable door with a thermometer and ceramic back. The FVR has a cast iron door with no hinge or thermometer.

The TOP series oven has a metal manifold versus the refractory cement on the FVR.

The front hearths are slightly different aesthetically, the FVR has a brick and mortar appearance and the TOP has an orange brick appearance.

Other than the above the ovens are practically identical.

    Ask a Question
    • Can this pizza oven be permanently installed outdoors and how many pizzas can it cook at one time, please?

Hi Peter, good question.  Yes, the Valoriani ovens can be installed outdoors.  It's always better to have an oven installed under a cover just to reduce the amount of moisture. But you can definitely install with no cover.

What we recommend is to apply a few coats of roll-on acrylic render over the top of the normal render coats. The acrylic render over the top does two things, it will assist on keeping water out of the oven (it's what's used on houses to keep water out) and it's also stretchy so it will avoid some of the hairline cracks that you normally would get with just a render coat. You will still get hairline cracks on the render underneath the acrylic render however you won't see them.  Result.

If you didn't water seal the oven, the oven could become moist and saturated and required an additional firing process again (increasingly larger fires over days - normally 5 to 10 days).  So it makes sense to apply a couple of coats of acrylic render over the top of the mass render so that you get a much better water seal.

It's not the end of the world if you get water in the oven, it just takes a little longer when you use the oven to drive the water out.  So the oven just becomes inefficient in heating up.
